Recipe: 4 Ingredient Protein Pancakes

OK, so lately I’ve been browsing the internet for cool new recipes and learning about different ingredients that can be used as healthy substitutes in foods I love. One of the recipes that really caught my eye was protein pancakes – I’ve been wanting to try these for some time but I usually just rotate my breakfast between oatmeal, eggs, or a protein shake (I know, I know BORING!) – so I decided to give them a shot.

After researching several versions of the recipe, I came up with my own version of these bad boys this morning and they did NOT disappoint! πŸ˜‰

Ingredients

1/2 scoop of your favorite protein powder (I used Garden of Life RAW Protein & Greens Chocolate protein – review for this product will be up soon!)

1/2 cup of rolled or steel cut oats

Two ripe bananas

Two egg whites

*Feel free to add a little cinnamon and/or vanilla extract to you batter for even more flavor! You can add any topping of your choice at the end (i.e. fruit, nut butter, honey).

Getting Started

To make your batter first mash up 2 very ripe bananas, then add the egg whites of 2 eggs, set aside. In a blender or food processor add 1/2 cup of oats and 1/2 scoop of protein and blend together to make your oat-protein”flour.” Now add this back into your banana egg mash and stir completely.

Heat up your skillet and add a small amount of butter or cooking spray to keep your pancakes from sticking.  Pour the batter onto the skillet to form SMALL pancakes – the batter is pretty sticky and smaller pancakes help when flipping them over πŸ™‚

This recipe yields about 6 pancakes and are only about 87 calories each! I topped mine with a tablespoon of Justin’s Honey Almond Butter and a couple of fresh strawberries. Sooooo yummy!

And don’t forget, you can still indulge in your favorite pancake house pancakes once in a while, but just remember there are healthy substitutes out there that can still satisfy your cravings! It’s all about having fun with your food…ENJOY!
