Recipe: Almond Joy Overnight Oats

Okay so I’ll admit it, I was an overnight oats skeptic for awhile but now I am definitely a fan. I’m sure you’ve seen the never-ending feed of beautiful oatmeal bowls and mason jars on Pinterest lately.

Mine usually don’t look THAT pretty so I haven’t posted any, but this recipe is too good not to share! Did I not tell you I would be giving you a gooey-gooey recipe soon?!

Overnight oats are simple: oats plus any mix-ins of your choice, soaking in milk over night in the fridge and then eaten cold or warmed up in the morning – YUM!

I came up with the recipe after experimenting with different combinations of ingredients like peanut butter, jam, chia seeds, fruit, etc. The possibilities are endless and there is really no wrong way to do it. Almond Joy candy bars used to be one of my favorites growing up and recently my coworker brought in a bag to work and I resisted, but it got me thinking of a healthier recipe with all the same delicious flavors. So overnight oats it is 😉

Ingredients

Toppings I used:

  • 1/4 cup sliced raw almonds
  • 1 tbsp almond butter
  • A dash more cinnamon + cacao powder

Directions

In small mason jar or dish with a lid (I just use a small Tupperware container) combine oats, flax seeds, shredded coconut, cacao powder, and cinnamon. Pour 1 cup of almond milk on top and stir until all ingredients are coated. Cover and leave in fridge overnight.

In the morning, uncover and warm up in the microwave for 2-3 minutes. Add toppings of your choice and enjoy! <3  These creamy oats taste just like an almond joy without all the added sugar and junk 😉

Pro Tip

This is also a recipe you can make in a big batch and meal prep for the week. Just mix all dry ingredients (oats, flax seeds, shredded coconut, cinnamon and cacao powder) into a big sealed container and portion it out for one serving every night before bed, add your milk,  and heat up the next morning. Repeat!
