Recipe: Double Trouble Treats

Hi y’all and happy Fri-YAY! Sorry I’ve been MIA with the blog posts, I’ve been beyond busy. But last night I decided to make two of my favorite treats and share them with my coworkers today.

I made one batch of Greek yogurt granola cups and one batch of peanut butter banana “cookies.” Both recipes are easy, delicious, and totally guilt-free! 😉

Here they are…

GREEK YOGURT GRANOLA CUPS

1 1/2 cups of granola (I used One Degree Organic  sprouted vanilla chia granola)

2 cups of Greek yogurt or yogurt of your choice

4 tbp honey

2 tsp cinnamon

1.5 cups of chopped fruit (I used organic strawberries, raspberries, blackberries)

*You’ll also need a 12 cup muffin tin

Instructions

Combine Greek yogurt and honey and cinnamon together, set aside.

Chop up berries or fruit of your choice, set aside.

Pour about 1/8 cup of granola into each cup of your muffin tin, then pour a scoop or two of the yogurt mix on top to cover the granola completely. Next sprinkle your chopped fruit on top. Freeze for about 6 hours or until firm.

I plopped them out and put them in Tupperware with wax paper (to keep from freezing together) and stored them back in the freezer.

When you want to eat them, just take one out and set out for a couple mins so that they aren’t TOO frozen. And enjoy! 😉

PEANUT BUTTER BANANA “COOKIES”

2 bananas

1 cup of rolled oats

1 tsp vanilla extract

1/2 tsp cinnamon

2 tbsp chia seeds

1/3 cup flaked or shredded coconut

4 dark chocolate sections or chocolate chips (I used Alter Eco Blackout dark chocolate bar and smashed it up into tiny pieces)

2 tbsp peanut butter

*You’ll also need a cookie sheet and wax/parchment paper

Instructions

Preheat oven to 350°.

Combine all ingredients together until everything is well-mixed.
Place about a tablespoon ball of the mixture on the cookie sheet (with the wax or parchment paper) until filled – leave space between cookies, but note that they will not expand much.

Bake for 14 mins and then devour! 🙂

This recipe makes about 20 “cookies” and are about 80 calories per cookie!
